Serves 6
Ingredients:
1 block low fat plain cream cheese
1 cup oat flour (or 1 cup + 2 tbsp oats blended in processor)
1 cup honey
1 tbsp + 1 tsp cinnamon
1 tbsp pure vanilla extract
1 mackintosh apple peeled & grated
8 blocks of white chocolate (baking chocolate)
2 apple wedges for garnish

Combine cream cheese, honey,vanilla extract,apple and cinnamon in large bowl.
Using a hand mixer, mix ingredients for 1 minute.
Gradually add in oat flour until fully combined and a smooth consistency is reached.
Using a spatula, scoop mixture onto the parchment paper and carefully shape the dough.
Be sure to smooth out the surface of the cake so it looks appetizing :)
Next, in microwave safe dish, microwave the white chocolate for 3 minutes
Let cool for 5 minutes then pour chocolate over the cake.
Use a spatula to smooth out any bumps.
Garnish with cinnamon and apple wedges.
Refrigerate for at least 40 minutes to allow chocolate to harden.
