Triple Chocolate Avocado Pie (Gluten Free)



 This dessert is for the die-hard chocolate fans out there! It is very rich and creamy but made with all natural ingredients. The avocado and dark chocolate packs it full of antioxidants. The avocado adds a nice creamy taste as well as a healthy dose of vitamins  A, C, E. Oh, and it's gluten-free! Now you can have your pie & eat it too :)


You'll Need:

9" x 9" baking pan
 Food processor ( a blender will do if you do not own a food processor)

Crust:

 1 C oats
1 C slithered almonds
1/2 C dark chocolate chips
1/3 C unsweetened cocoa powder
1 large egg
1/4 C honey


Preheat oven to 360F

Add oats to food processor, process for 2 minutes until a flour forms.

Empty flour into large bowl.

Add slithered almonds to food processor, process for 2 minutes until almond flour forms.

Add almond flour to oat flour as well as the dark chocolate chips - put back into food processor, process for 2 minutes. 

Be sure to scrape down sides of the processor with spatula to ensure all ingredients are blended well.

In separate bowl, whisk one egg and add to processor along with 1/4 cup of honey.

Process for 1 minute

Roll mixture into ball and roll the dough using a rolling pin. 

Lightly grease pan with olive oil

Using fingers, press the dough into the pan to form crust.

Bake for 10 minutes


Let cool.


Filling:

1/2 C + 1/3 C dark chocolate chips
 3 ripe avocados 
1/3 C + 4 tsp honey
 1/4 C + 4 tsp unsweetened cocoa powder
1 tsp pure vanilla extract


Microwave chocolate chips for 1 minute.

Scoop out the avocados and add to food processor.

Process for 2 minutes, until a smooth consistency is reached.

Add honey, cocoa powder and vanilla extract, process for an extra minute.

Pour mixture into a bowl, fold in the melted chocolate using a spatula.

 Refrigerate for 30 minutes and allow pie crust to cool.

Add pie filling to the crust.

Using a veggie peeler, shave off some of your favorite chocolate and sprinkle on top of the pie.


Refrigerate for another 20 minutes before serving.
