Toasted Coconut/Cranberry/Chocolate Chip Cookies



  Makes 14 cookies

Preheat oven to 400F
Bake for ~17 min


 Dry Ingredients:

3/4 C whole wheat flour (sifted)
1/3 C oats
1/4 C sugar
2 tsp baking powder
 1/4 tsp salt
 whisk to combine

 Wet Ingredients:

1/4 C milk
1 egg white
3 tbsp non-fat vanilla Greek yogurt
2 tbsp olive oil
1 tbsp Chia seeds
1 tsp pure vanilla extract
 whisk to combine

using a spatula, gently fold wet ingredients into dry

Next, you'll need:

1/3 C + 2 tbsp shredded coconut
1/3 C pure chocolate chips
1/3 C dried sweetened cranberries
fold in using spatula


Roll into balls and roll them in coconut
 Place onto greased baking tray

Bake for approx. 17 minutes. 

Top with extra coconut!
