This breakfast sandwich is quite simple, but the combination of flavors are mouth-watering.
You'll Need:
1 egg (poached)
1 whole wheat English muffin
Fresh crumbled Parmesan Reggiano
2 leaves of Boston Lettuce (butterhead lettuce)
Pinch of sea salt
pinch of pepper
a little butter if desired
To poach an egg you must:
Fill 2/3 of a pot with water
Add 1 tsp white rice vinegar
Bring to a gentle boil
Crack the egg without breaking the yolk onto a small plate
Gently slide the egg into the boiling water (do not break the yolk)
Boil for 2 minutes
Scoop egg up using a slotted ladle
Don't forget to toast your English muffin :)
