Makes 6 large pancakes
Ingredients:
1 Cup + 2 tbsp whole wheat flour
1 Cup skim milk
1 egg
2 tbsp honey
2 tsp rice vinegar
2 tsp olive oil
1 tsp pure vanilla extract
1 + 1/2 tsp baking powder
1/8 tsp salt
Combine dry ingredients ( flour,baking powder, salt) in medium sized bowl.
Whisk to combine.
In separate bowl, combine wet ingredients (milk, vinegar, egg, olive oil, honey, vanilla extract)
Whisk until egg is lightly beaten.
Next, add wet ingredients to dry.
Whisk for 20 seconds.
Heat pan with 2 tbsp olive.
Fry pancakes on medium heat.
Wait until you see the bubbles, then flip.
Top with powdered sugar & pure maple syrup.
(optional) To boost the protein content, add a scoop of vanilla Greek yogurt.
Don't forget the coffee :)
