Mushroom Shrimp Pillows





 Serves 2

Preheat oven to 425F

Shrimp Pillows
 
Ingredients:

1 + 1/3 C shrimp
1 + 1/3 C fresh white mushrooms, chopped
1 egg white
1/2 C shredded mozzarella 
 3 tbsp chopped green onion
1 tsp fresh thyme leaves
1 tsp fine herbs (french style)
1/2 tsp garlic powder
1/4 tsp pepper
2 tsp fresh squeezed lemon juice
1/3 C yellow onion, chopped

combine shrimp, mushrooms, egg white, green onion, herbs, pepper, garlic, lemon juice, half the mozzarella  

pulse in food processor until a thick paste is formed

scoop mixture into large bowl

add the yellow onion 

 roll into 10 small balls (pillows)


Tomato Sauce

Ingredients:

1 can diced tomatoes (drained)
 1 tbsp sugar
 ---------------------------------------------------


 grease glass baking dish and place shrimp pillows in the oven for 13 minutes

remove from oven add in tomato sauce

bake for an additional 20 minutes


While waiting for shrimp pillows to cook, bring 2 cups of water to a boil, next, add 1 + 1/2 C Jasmine rice. Reduce heat and let simmer for 10 minutes.


Top with the remaining shredded mozzarella!
