Shrimp and Veggie Oriental Soup






Serves 2

Ingredients:

1/4 package of noodles (Farkay Chinese Style Noodles)
4 C water
1 C frozen shrimp
1/2 C thinly sliced carrot
1/4 C chopped white onion
1/4 C endamame 
  5 tbsp soya sauce
3 tbsp fresh grated ginger
2 cloves of garlic, grated
4 tbsp green onion
1 tbsp olive oil
pepper to taste


In a skillet, sautee onion, ginger and garlic in olive oil over medium heat for 1 minute


Add in half of the water,carrot, and endamame


Simmer for 5 minutes


Add remaining water, soya sauce


Simmer on low heat for 10 minutes before adding shrimp


Simmer for another 3 minutes


Boil noodles according to package directions, rinse under cold water


Add noodles to bowl and top with soup


Garnish with green onion


Add a little pepper to taste
