** These carrot cake bites are a healthy alternative to carrot cake :) No added fat, with a much lower sugar content.
Ingredients:
1 C oatmeal flour
1 C dry oats
5 tbsp plain non-fat greek yogurt for an added protein boost
3 medium carrots peeled and grated
1/4 C honey or agave
4 tbsp crushed pecans
4 tbsp crushed cashews
3 tbsp cinnamon
2 tsp ginger
1/2 tbsp nutmeg
1 tbsp pure vanilla extract
1 tsp orange zest
combine wet ingredients
In a separate bowl, combine oat flour + dry oats
slowly add wet ingredients to the dry
using a spatula, fold in the nuts
roll into 2 inch balls
sprinkle a little powdered sugar on top
consume in a race-like fashion ;)
