Pumpkin Spice Cookies

 
PuMpKin SpIcE CoOkIeS
 (makes 8 large cookies or 16 small)



Ingredients:

1 C all purpose flour
1/2 C canned pumpkin
1/2 C white sugar
1/4 C brown sugar
1/4 C oats
4 tbsp butter
1 tbsp cooking molasses 
2 tsp cinnamon
1 tsp ginger
1 tsp baking powder
1 tsp maple extract
1 tsp vanilla extract
1/4 tsp nutmeg
1/4 tsp cloves
 1 egg

 
         To make the cookies...

        

         Preheat oven to 350F 

  • Place parchment paper on baking sheet. 
  •  Lightly grease the parchment paper.
  •  In a large bowl, add butter, sugar, maple extract, vanilla extract, cinnamon ginger, nutmeg, cloves, molasses, pumpkin, and egg. Stir for 15 seconds.
  •   In another bowl, combine flour, baking powder, and oats.
  •  Using a spatula, fold in the dry ingredients to the wet.
  •  Use a spoon to transfer the batter onto the baking sheet. Be sure to leave an inch between each cookie so they do not stick together. 
  •  Bake for 13 minutes on middle rack. 
  •  Let cool, sprinkle with a little powdered sugar.







Sooo soft and moist on the inside.
