Serves 5
You'll Need:
1 can black beans (rinsed and drained)
1 can diced tomatoes (drained)
5 tbsp fresh cilantro leaves
3 tbsp olive oil
4 tsp chilli powder
3 tsp cumin
1/2 tsp dried coriander
2 cloves of garlic
1 lemon
1 yellow onion
1 C brown rice
tortilla chips
3 avocados
salt & pepper
mild salsa
non- fat sour cream
1 C light mozzarella cheese (shredded)
In large pot, sautee onion, garlic, spices in olive oil over low heat.
Sautee until onion looks translucent.
Drain diced tomatoes and add to pot along with the black beans. Add 1 tsp lemon zest and fresh cilantro.
Meanwhile, in a separate pot, boil the brown rice according to package directions.
Once rice is cooked, add it to the large pot. Cover and let simmer for 15 minutes.
Guacamole
3 ripe avacados
1 clove of garlic
2 tsp fresh lemon juice
pinch of salt & pepper
1 tsp fresh cilantro
Peel avocados, place in bowl along with grated garlic, lemon juice, salt + pepper, and cilantro.
Using a fork, mash all ingredients together (or use a blender).
Top tortilla chips with burrito mixture + mozzarella cheese+ salsa + guacamole+ non-fat sour cream.
