Veggie Pizza

 serves 3-4

Preheat oven to 410F

Bake for 15 minutes

Add cheese

Bake for an additional 7 minutes
 

Crust:

2+1/4 cup whole wheat flour
 1 cup warm water
3 tbsp sugar
2 tbsp olive oil
1 tsp salt
1 tsp quick rising yeast

combine water and sugar in large bowl
add yeast
let it stand for ~ 6 minutes
add salt, olive oil and gradually mix in the flour
knead for 3 minutes
 cover and let rise for 30 minutes

while dough is rising, make the pizza sauce.


Pizza Sauce:

1 large can diced tomatoes (drained)
3 tbsp sugar
2 tbsp dried oregano
1/2 tsp olive oil
1/2 tsp white rice vinegar
1/3 tsp garlic powder
 1/4 tsp salt
1/4 tsp pepper

Blend all ingredients in food processor using low speed

Transfer to small pot and bring to a boil

Reduce to low heat and simmer for ~ 30 minutes, allowing sauce to reduce and thicken

Stir frequently

Toppings:

1 small yellow onion
1/2 sweet red pepper
4 whole mini bella mushrooms
1/4 cup baby spinach leaves
3/4 cup light mozzarella cheese (do not add until pizza had been baking for 15 minutes)
2 tbsp fresh oregano leaves

 
 

 


Cut into 6 large slices
 

Let cool for 10 minutes before serving



Dig in!

...and be sure to have that second slice :)
